These are great as a quick breakfast or post workout snack. Good carb/protein ratio!

1/3 c. coconut oil
1/2 c. crunch peanut or almond butter
1/2 c. maple syrup
1/2 c. almond milk
2 tsp. vanilla
1 c. shredded unsweetened coconut
1/2 c. Fry’s cocoa
2 1/2 quick cooking oats
1/3 shredded coconut for rolling

In a med. size bowl cream together nut butter and coconut oil.
Add maple syrup, milk and vanilla; stir till well combined
Add cocoa and blend in gently.
Stir in oatmeal and mix well.
Form mixture into small balls and roll in shredded coconut
Keep in fridge for 2 – 3 days or freeze.
