As we emerge from pandemic isolation toward the light of summer we may feel inspired to renew our focus on a healthier lifestyle. I’m here to help by sharing one of my favourite summer recipes that can be enjoyed either as a meal or side dish. It’s as healthy as it is yummy!

This super food quinoa and kale salad is jam packed with nutrients AND tastes delicious – a real win/win;)
Did you know quinoa is a gluten free grain considered to be a super food? It’s (16%) protein which is much higher than most cereal grains and it contains all nine essential amino acids making it a complete protein

Kale shares the super food status of quinoa and is among the most nutrient- dense foods on the planet. It’s high in vitamin’s A and C, both vital for strong immunity. It contains Vitamin K, which is good for bone building and prevention of osteoporosis. There are also numerous cancer fighting substances in kale.

All the ingredients are clean, whole foods which help us feel great and function optimally. When we eat well, we feel well.

It’s important to note that it’s not my intention to perpetuate the culture of fat shaming or fuel any pressure to lose weight, all too commonly referred to these days as ‘pandemic pounds’ or the ‘quarantine 15’. We all have bigger issues in our lives at the moment which is why it’s good to be reminded that our value is not represented by a number on the scale.

Instead, I aim to inspire you to live your happiest, healthiest life. Super Food Salad

Cook 2 cups (pre cooked) quinoa – let cool completely

Finely chop:

1/2 red onion

yellow pepper,

kale (spine removed)

Dried mango wedges or use whole dried cranberries

Feel free to add or sub in any of your fave veg!

Stir ingredients together with balsamic dressing

Top with crumbled goat’s feta

Dressing:

1/3 balsamic vinegar to 2/3 olive oil

Juice of 1/2 lime

teaspoon dijon mustard

Tbsp maple syrup

2 cloves garlic minced

S+P

Once salad is dressed, let sit refrigerated a few hours or overnight for optimal taste.
